We are lucky to have many mature elderberry bushes on our farm. We love making wine with them. You can also make your own elderberry syrup. There are many recipes for elderberry syrup for free on the web.
As elderberries are fragile, we pick our berries and immediately freeze them. As such, these are perfect for making wine or syrup. Ensure you wash your elderberries. You'll need to de-stem the elderberries, which is easy to do while frozen. Stems can easily be separated by floating them in water. Most berries will sink, allowing the floating stems to be easily separated. Discard stem material and any green berries before further processing.
All elderberries must be heat treated with most stems and green elderberries discarded before consuming. Heating is a standard process when making elderberry wine or syrup.
